My favourite meals are those that can take me on holiday without moving from the comfort of my home and this is it. The potatoes, chorizo and chicken are cooked together and crisped up before wine and leeks are added to the tray (pan) – they add a perfect complementary sweetness to this dish.

6 bone-in, skin-on chicken thighs

500 g (1 lb 2 oz) baby new potatoes, large ones halved

100 g (3½ oz) chorizo, thinly sliced

2 tablespoons olive oil

salt and freshly ground black pepper

200 ml (7 fl oz/scant 1 cup) dry white wine

1 chicken stock cube

100 ml (3½ fl oz/scant ½ cup) boiling water

1 leek, sliced into 1 cm (½ in) rings

100 g (3½ oz) baby spinach

grated zest of ½ lemon
